beef chili roll ups

Like a marriage of chili and a burrito, these roll-ups feature savory beef chili, soft tortillas, fiery salsa, and gooey cheese. Easy to make, prep-ahead friendly, and completely customizable!

beef chili roll ups

This is the ultimate family-friendly meal! And you can modify the ingredients to suit every member of your clan. For a spicy version, use hot chili powder and hot salsa. For a mild version, use regular chili powder and mild salsa.

You can also make these roll ups with chicken or turkey. More of a poultry fan, are you? No problem! Swap ground chicken or turkey in for the beef; the roll ups are just as delicious.

If you want a heartier filling, add beans to the beef mixture. I chose to leave beans out, but I often add pinto beans, black beans, or kidney beans to my chili. For these roll ups, add your favorite bean (pink, pinto, white, navy, kidney, etc.) to the beef mixture before stuffing the tortillas. And, you can use regular beans or the seasoned beans.

For gluten-free roll ups, use corn tortillas. It’s easy to create a gluten-free meal by using soft corn tortillas, and the flavor of corn partners beautifully with the chili filling.

This is a great prep-ahead meal. You can assemble this dish up to 24 hours in advance – cover it with plastic wrap and refrigerate until ready to bake. Pull the dish from the refrigerator 30 minutes before baking.

Equipment

Instructions

  • Preheat the oven to 350 degrees. Coat a shallow baking dish or ovenproof pan with cooking spray.
  • Brown the beef in a large saucepan over medium-high heat, breaking up the meat as it cooks. Add the chili powder, cumin, cilantro, onion powder, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and stir to coat. Cook for 1 minute, until the spices are fragrant.
  • Add the tomato sauce and bring to a simmer. Reduce the heat to low, partially cover and simmer for 10 minutes. Remove the pan from the heat.
  • Arrange the tortillas on a flat surface. Spoon the chili mixture down the center of each tortilla. Roll up tightly and arrange side-by-side in the prepared pan.
  • Spoon the salsa over top and then top with the cheese.
  • Cover with foil and bake for 15 minutes. Uncover and bake for 5 to 10 more minutes, until the cheese melts.
  • Top with green onions and cilantro, if using, and serve.
