Sirloin Tip Roast

This juicy beef is laced with garlic and herbs and roasted to tender perfection. The crust is ultra-tasty and the flavorful juices are locked in right from the beginning. You need very few ingredients and the oven does all the work!

What is sirloin tip roast? Also called round tip roast, this cut of meat comes from the front of the rear leg of the cow, making it lean and ideal for roasting, especially slow roasting. Despite the name, it’s not sirloin, it’s just near the sirloin area of the cow. I used wagyu beef for this roast, so it’s extra tender and flavorful.

Start with a high oven temperature! We start this roast in a 450-degree oven because the high initial temperature creates a delicious crust and seals in the juices. After 15 minutes, we lower the oven temperature to 325 and let the beef slow roast until tender. You can cook and serve this beef rare, or well done, just use a meat thermometer to ensure you stop cooking when you reach your desired level of doneness.

How long should you cook your sirloin tip roast? The cooking time for this roast will depend on the temperature of your roast, it’s shape, size, and weight, and how you would like it cooked. Pull your roast from the refrigerator 1 hour before cooking to ensure it’s not cold in the middle. Then, follow the guidelines below for perfectly cooked meat:
Remember: The meat will continue to cook when it rests, so remove it from the oven 5 to 10 degrees before you reach your optimal temperature.
- Rare: 120 to 125 degrees, about 10 to 11 minutes per pound
- Medium rare: 130 to 135 degrees, about 13 to 14 minutes per pound
- Medium: 140 to 145 degrees, about 14 to 15 minutes per pound
- Medium well: 150 to 155 degrees, about 15 to 16 minutes per pound
- Well done: 160 to 165 degrees, about 16 to 17 minutes per pound

What should you serve with your sirloin tip roast? Anything goes here! I served my tip roast with oven-roasted vegetables and buttery baked potatoes. You can also serve the beef with rice, buttered noodles, couscous, mashed potatoes, or your favorite cooked grain. Add a salad and/or your favorite sides and the meal is complete.


Sirloin Tip Roast
Ingredients
- 3 pound sirloin tip roast
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon onion powder
- Salt and freshly ground black pepper
Instructions
- Remove the roast from the refrigerator 1 hour before cooking.
- Preheat the oven to 450 degrees.
- In a small bowl, combine the olive oil, garlic, Italian seasoning, onion powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Pat the roast dry with paper towels. Rub the oil mixture all over the roast.
- Transfer the roast to a shallow roasting pan or cast iron skillet and roast at 450 degrees for 15 minutes.
- Reduce the oven temperature to 325 degrees and cook until you reach your desired level of doneness. See below (use a meat thermometer and start checking at the earliest time).
- Remove the roast from the oven, loosely tent with foil and let stand for 20 minutes before carving.
- Slice the meat across the grain and serve with any pan drippings.
- Store leftover sliced beef in the refrigerator for up to 3 days.
