Packet cooking (a classic way to steam fish), is the best way to guarantee sublimely tender fish every time. In this recipe, halibut fillets are seasoned with butter, lemon, and rosemary and baked to perfection in about 15 minutes. Because the fish is sealed in a packet with the flavor elements, itโ€™s infused with deliciousness all the way through. And cleanup couldnโ€™t be easier!

Cooking time for packet cooking depends on the thickness of your fish fillets. Halibut fillets are generally thick, but if youโ€™re using a different fish variety (salmon, cod, flounder, etc.), cooking time may vary. Thin fillets will cook in 10 to 12 minutes, and thicker fillets will take about 14 to 16 minutes. Still a fast meal, no matter what you choose!

What should you serve with your baked halibut? I served our halibut packets with fluffy seasoned rice and steamed vegetables. Add your favorite vegetables and whole grains on the side and you have a completely, satisfying, wholesome meal.

Baked Halibut Packets with Rosemary

Ingredients
 

  • 4 halibut fillets, about 5 to 6 ounces each
  • Salt and freshly ground black pepper
  • 4 teaspoons unsalted butter
  • 4 slices lemon, about 1/8-inch thick rounds
  • 4 fresh rosemary sprigs, about 4-inches long
  • Lemon wedges for serving

  • Preheat the oven to 400 degrees.
  • Arrange four 12- to 14-inch pieces of parchment paper on a flat surface. Arrange the halibut fillets on the center of each piece.
  • Season the halibut with salt and black pepper. Top each fish fillet with 1 teaspoon of the butter. Arrange a lemon slice on the butter and then top with a sprig of rosemary.
  • Lift the parchment paper on 2 opposite sides to meet in the middle, above fish. Tightly fold and roll over the paper until it reaches fish. Pull up the ends and crimp to seal. Transfer the packets to a large baking sheet and bake for 14 to 16 minutes, until the fish is fork-tender and opaque throughout.
  • Serve the halibut with lemon wedges on the side.
