This mouth-watering, comforting meal is totally customizable. You can choose mild or hot sausage, and the sausage can be made with pork, chicken, or turkey. Vegan sausage works as well.

Feel free to use your favorite vegetables here. I chose broccoli, but you can also use green beans, peas, asparagus, spinach, kale, tomatoes, corn, bell peppers, and so on.

Pasta with Sausage and Broccoli

Ingredients
 

  • 1 pound penne pasta, or pasta of choice
  • 1 pound sweet or spicy Italian sausage, casing removed if using links
  • 2-3 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 3-4 cups fresh or frozen broccoli florets, kept frozen until ready to use
  • Salt and freshly ground black pepper
  • 3 tablespoons unsalted butter
  • 1/2 cup grated parmesan cheese

  • Cook the pasta according to the package directions. Drain and cover with foil to keep warm. Meanwhile, brown the sausage in a large, high-sided skillet over medium-high heat, breaking up the meat as it cooks. Add the garlic and cook for 30 seconds.
  • Add the broth, broccoli, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and bring to a simmer. Simmer for 3 to 4 minutes, until the broccoli is tender-crisp, scraping up any browned bits from the bottom of the pan and incorporating them into the sauce. Add the butter and simmer for 2 minutes, until the sauce thickens slightly.
  • Fold in the pasta and parmesan cheese. Cook for 1 to 2 minutes to heat through. Season to taste with salt and black pepper and serve.
