Instructions
Preheat the oven to 350 degrees. Coat an 8-inch square baking pan with butter, or vegetable oil, or cooking spray.
In a large mixing bowl, whisk together the applesauce, melted butter (or oil), egg, and vanilla.
Whisk in the flour, sugar, cinnamon, baking soda, and salt until just blended (don't over-mix; mix just until the flour is incorporated). Fold in the butterscotch chips.
Transfer the batter to the prepared pan and smooth the surface. Bake for 30 to 40 minutes, until a wooden pick inserted near the center comes out with little moist bits clinging to it.
Cool the cake in the pan, on a wire rack, for 10 minutes before slicing and serving. Store leftovers in an airtight container.
