Applesauce Cake with Butterscotch Chips

Ingredients

  • Cooking spray
  • 1 1/4 cups unsweetened applesauce
  • 4 tablespoons butter melted, or vegetable oil or coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour or gluten-free flour of choice
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup butterscotch chips

Instructions

  • Preheat the oven to 350 degrees. Coat an 8-inch square baking pan with butter, or vegetable oil, or cooking spray.
  • In a large mixing bowl, whisk together the applesauce, melted butter (or oil), egg, and vanilla.
  • Whisk in the flour, sugar, cinnamon, baking soda, and salt until just blended (don't over-mix; mix just until the flour is incorporated). Fold in the butterscotch chips.
  • Transfer the batter to the prepared pan and smooth the surface. Bake for 30 to 40 minutes, until a wooden pick inserted near the center comes out with little moist bits clinging to it.
  • Cool the cake in the pan, on a wire rack, for 10 minutes before slicing and serving. Store leftovers in an airtight container.
