Ingredients

  • Cooking spray or olive oil for coating the pan
  • 3/4 cups panko breadcrumbs regular or gluten-free
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons mayonnaise
  • 4 teaspoons chopped green onions
  • Salt and freshly ground black pepper
  • 4 firm-fleshed white fish fillets about 5 to 6 ounces each
  • Chopped fresh parsley for serving

Instructions

  • Preheat oven to 400 degrees. Line a large baking sheet with parchment paper or aluminum foil.
  • In medium bowl, combine the breadcrumbs, parmesan cheese, mayonnaise, and green onions. Mix well and set aside.
  • Pat the fish fillets dry and transfer them to the prepared pan. Season the top with salt and black pepper.
  • Top the fillets with the panko mixture and press down gently to create a crust.
  • Bake for 8 to 10 minutes, until a meat thermometer registers 125 to 130 degrees.
  • Remove the pan from the oven and preheat the broiler.
  • Place the pan under the broiler (about 4 inches from the heat source) and broil for 1 to 2 minutes, until the crust is golden brown and the fish is fork-tender.
  • Top the fish fillets with fresh parsley and serve.
