  • 1 cup all-purpose flour or gluten-free flour
  • 1/2 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup mashed overripe bananas 2 to 3 bananas, depending on size
  • 2 1/2 tablespoons unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Chocolate fudge sauce of choice warmed if desired (when warm, the sauce is easier to drizzle)

Instructions

  • Preheat the oven to 350 degrees. Coat 9 cups of a donut pan with cooking spray.
  • In a medium bowl, whisk together the flour, brown sugar, baking powder, and salt.
  • In a separate bowl, combine the mashed bananas, melted butter, egg, and vanilla. Add the banana mixture to the flour mixture and mix until just blended (until you no longer see the dry ingredients); try not to over-mix.
  • Spoon or pipe the batter into the donut pan, filling 9 cups. Bake for 10 to 12 minutes, until a wooden pick comes out clean or with little moist bits clinging to it.
  • Cool the donuts in the pan for 2 minutes. Loosen the sides of the donuts and transfer them to a wire rack to cool completely. Use a fork to drizzle the fudge sauce over the donuts and serve.
  • Store leftovers in an airtight container for up to 3 days.
