Ingredients

  • 6 tablespoons unsalted butter cut into pieces
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 3-4 ripe but firm bananas peeled and sliced lengthwise, then crosswise
  • ¼ cup dark rum
  • Vanilla ice cream for serving

Instructions

  • Melt the butter in a large skillet over medium heat.
  • When the butter is bubbly, add the sugar, vanilla, cinnamon, and salt. Cook until the mixture is thick and bubbly, whisking constantly.
  • Add the bananas to the pan, cut side down. Cook for 1 minute, until the bananas are lightly caramelized on the cut side. Use a spatula to flip the bananas over.
  • Turn off the heat (this is important) and add the rum to the pan (the sauce should still be bubbling). Use a long-reach lighter or kitchen torch to ignite the sauce. Cook, shaking the pan, until the flame goes out. Note: Lighting the rum is optional.
  • Transfer the bananas and sauce to dessert plates and serve with ice cream.
