1/2teaspoonsesame oil
1tablespoonvegetable oil

1bell pepperany color, seeded and chopped

Instructions
In a shallow dish, combine 1 tablespoon of the water and 1 teaspoon of the cornstarch. Add the chicken and turn to coat all pieces. Set aside.
In a small bowl, whisk together the remaining 2 tablespoons of water, remaining 2 teaspoons of cornstarch, soy sauce, mirin, black pepper, and sesame oil.
Heat the oil in a wok or large skillet over medium-high heat. Add the chicken and cook until no longer pink. Add the onion and bell pepper and cook for 2 minutes, until the chicken is golden brown and cooked through and the vegetables soften.
Add the soy sauce mixture and bring to a simmer. Simmer for 2 minutes, until the sauce thickens and coats the chicken and vegetables.
Top with green onions (if using) and serve over rice (if desired).
