1poundboneless skinless chicken breaststenders or thighs, cut into bite-size pieces

16 to 20ouncesred enchilada sauceeither one 16-ounce can/jar or two 10-ounce cans
1/4cupheavy/whipping cream
1cupshredded Mexican cheese blenddivided
Cooked rice for serving
Chopped fresh cilantro for servingoptional

Instructions
Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on all sides. Add the oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and stir to coat. Cook for 1 minute, until the oregano is fragrant.
Add the enchilada sauce and bring to a simmer. Reduce the heat to low and simmer for 10 minutes. Stir in the cream and 1/2 cup of the cheese. Cook until the cheese melts.
Spoon the mixture over the rice and top with more cheese. Top with cilantro and green onions, if using and serve.
