Equipment

Ingredients

  • 1 cup rice of choice I used basmati
  • 1 pound ground chicken
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper
  • 1 cup chicken broth
  • 1/2 cup ketchup
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • Chopped fresh parsley for serving optional
  • Chopped green onions for serving optional

Instructions

  • Cook the rice according to the package directions.
  • Meanwhile, brown the chicken in a large skillet or saucepan over medium-high heat, breaking up the meat as it cooks. Add the chili powder, oregano, basil, onion powder, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and stir to coat. Cook for 1 minute, until the herbs and spices are fragrant.
  • Add the broth, ketchup, Dijon mustard, and Worcestershire sauce and bring to a simmer. Reduce the heat to low, partially cover and simmer for 10 minutes. Season to taste with salt and black pepper.
  • Transfer the rice to individual bowls and top with the chicken mixture. Top with parsley and green onions (if using) and serve.
