Buttery sugar cookies, baked to perfection and then stuffed with cinnamon-scented dark chocolate! This is an excellent way to jazz up store-bought cookie dough!

1package sugar cookie dough of choiceI used a 9-ounce package of Pillsbury pumpkin-shape sugar cookie dough with 20 pre-cut cookies
1 1/2cupssemisweet chocolate chipsor melting wafers, or a cut-up chocolate bar
1teaspoonvegetable oil or coconut oil
1/2teaspoonground cinnamon
Instructions
Bake and cool the cookies according to the package directions.
Combine the chocolate chips and oil in a bowl and melt in the microwave (checking and stirring every 30 seconds), or over a saucepan of simmering water. Fold in the cinnamon.
When the cookies have cooled, spoon the chocolate mixture on the bottom of half of the cookies. Top with the second cookie to make a sandwich. Cool until set.
Store leftovers in an airtight container for up to one week.
