Ingredients

  • 28- ounce can tomatoes whole, diced, or crushed
  • 1/2 cup fresh cilantro leaves
  • 2 green onions cut into 2-inch pieces, or 1/4 cup chopped red onion
  • 1 jalapeño pepper or chile pepper of choice, seeded and chopped
  • 2 cloves garlic chopped, or 1 teaspoon dried minced garlic
  • 1 lime
  • Salt and freshly ground black pepper

Instructions

  • In a blender, combine the tomatoes, cilantro, green onions, jalapeño, and juice of 1 lime. Process until blended to your preference - chunky or smooth. Season to taste with salt and black pepper.
  • Store in an airtight container in the refrigerator for up to 5 days.
