Cook rice or Asian noodles for serving

Instructions
Heat the oil in a large skillet over medium-high heat. Add the onion and bell peppers and cook for 3 to 5 minutes, until soft.
Add the chicken and cook for 3 to 5 minutes, until golden brown on all sides. Add the garlic and cook for 1 minute. Season with salt and pepper. Add the preserves, chicken broth, soy sauce, sesame oil, and dried cilantro and bring to a simmer. Reduce the heat to low and simmer for 10 minutes, until the sauce thickens.
Spoon the chicken and sauce over rice or noodles and top with cilantro and green onions, if using.
