2tablespoonsolive oil
1tablespooneverything bagel seasoning
1tablespoonchopped fresh parsley for serving
Kewpie mayonnaise or regular mayonnaise for servingoptional
Instructions
Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper or foil.
Place the potatoes in a large pot and pour over enough cold water to cover by about 2 inches. Set the pan over high heat and bring to a boil. Boil for 8 to 10 minutes, until fork-tender (timing will depend on the size of your potatoes).
Drain and when cool enough to handle, transfer the potatoes to the prepared pan, spreading them out so they have room to be "smashed".
Use the bottom of a jar or mug to smash the potatoes until they are about 1/2-inch thick.
Brush the potatoes with the olive oil and sprinkle with the everything bagel seasoning.
Bake for 10 to 12 minutes, until the edges of the potatoes are crispy and golden brown. Top with parsley and serve with mayonnaise on the side (if desired).
