Sweet honey and creamy butter make the perfect sauce for these tender carrots. As the buttery-sweet blend simmers and reduces, it creates the most fantastic glaze for the carrots while bringing out their natural sweetness.

  • 1 pound baby carrots
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon dry sherry if you're cooking for kids, you can leave this out
  • Salt and ground black pepper

Instructions

  • Place the carrots in a medium saucepan and pour over enough cold water to cover by about 2 inches. Set the pan over high heat and bring to a boil. Reduce the heat to medium, cover and simmer for 5 minutes. Drain and set aside.
  • Melt the butter in a large skillet over medium heat. Whisk in the honey, brown sugar, and sherry. When the brown sugar has dissolved, stir in the carrots. Cook for 3 minutes, until the carrots are hot and glazed. Season to taste with salt and black pepper.
