Ingredients

  • 1 cup long grain white rice
  • 1 tablespoon vegetable oil
  • 1 pound boneless skinless chicken breasts tenders, or thighs
  • 1/2 cup chopped onion
  • Salt and freshly ground black pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce or more soy sauce
  • 1 tablespoon honey
  • 1 cup frozen mixed vegetables kept frozen until ready to use
  • Chopped green onions for serving optional

Instructions

  • Cook the rice according to the package directions. Transfer to a baking sheet and spread out to cool.
  • Heat the oil in a large skillet or wok over medium-high heat. Add the chicken and cook until no longer pink. Add the onion and garlic and cook for 3 to 5 minutes, until the onion is soft. Season the chicken and vegetables with salt and black pepper.
  • Add the soy sauce, hoisin sauce, and honey and stir to coat. Fold in the rice and vegetables and cook for 2 minutes to heat through. Season to taste with salt and black pepper.
  • Top with green onions, if using, and serve.
