Ingredients

  • 1 pound ground chicken
  • 1/3 cup panko bread crumbs or gluten-free bread crumbs
  • 1/3 cup grated parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper
  • 1 bell pepper seeded and sliced into strips, or 4-6 mini peppers, halved and seeded
  • 1 tablespoon olive oil plus more for brushing the meatballs
  • Sliced or chopped fresh basil for serving

Instructions

  • Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
  • In a large bowl, combine the chicken, bread crumbs, parmesan, egg, garlic, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and shape the mixture into 16 to 18 meatballs. Arrange the meatballs on the prepared pan. Bake for 10 minutes.
  • Toss the bell peppers with the olive oil and season with salt and black pepper. Arrange the peppers alongside the chicken on the baking sheet.
  • Bake for 10 more minutes. Brush the meatballs with olive oil and cook for 5 more minutes, until the meatballs are cooked through and the peppers are browned and soft.
  • Top with fresh basil and serve.
