Lemon Chicken

This ultra-juicy chicken is shimmering with a buttery, garlicky, lemony glaze. Plus, the chicken is scented with herbs and parmesan, so there's an incredible amount of flavor in every juicy bite!

Ingredients

  • 1 pound boneless skinless chicken breasts halved through the middle to make thin fillets, or 1 pound pre-sliced chicken breast fillets
  • Salt and freshly ground black pepper
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 4 tablespoons butter
  • 2 cloves garlic minced
  • 1/4 cup fresh lemon juice
  • 1/4 cup chicken broth
  • Chopped fresh parsley for serving optional
  • Lemon slices for garnish optional

Instructions

  • Season both sides of the chicken with salt and black pepper. Season both sides with the parmesan cheese and Italian seasoning.
  • Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides. Transfer the chicken to a plate.
  • Melt the butter in the same pan over medium heat, scraping up any browned bits from the bottom of the pan. Add the garlic and cook for 1 minute. Add the lemon juice and chicken broth and bring to a simmer.
  • Return the chicken to the pan with any accumulated juices from the plate. Simmer for 5 minutes, until the chicken is cooked through.
  • Top with parsley, if using, and serve with lemon slices (if desired).
