Instructions
In a large bowl, combine the ground beef, parmesan cheese, oregano, basil/parsley, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and shape the mixture into about 26 meatballs.
Heat the oil in a large stock pot over medium-high heat. Add the meatballs and cook until browned on all sides. Transfer the meatballs to a plate and set aside, leaving the oil in the pan.
Add the onion, bell pepper, celery, and garlic to the same pan over medium-high heat. Cook for 3 to 5 minutes, until soft. Add the broth, tomato paste, and Worcestershire sauce and bring to a boil, scraping up the browned bits from the bottom of the pan.
Add the rice and return to a boil. Add the meatballs with any accumulated juices from the plate. Reduce the heat to medium, partially cover and simmer for 20 minutes, until the rice is tender and the meatballs are cooked through. Season to taste with salt and black pepper.
Ladle the soup into bowls and top with green onions and/or parsley, if using.
