Peanut Butter Stuffed Dates with Chocolate

These 3-ingredient gems will rock your world. Chewy-sweet dates, stuffed with peanut butter and dunked in dark chocolate. They taste exactly like a Snickers (but a healthier option)!

Ingredients

  • 12 dried dates
  • 6 teaspoons peanut butter or nut butter of choice, smooth or chunky
  • 1 cup semisweet chocolate or milk chocolate chips, or melting wafers
  • Optional: 1 teaspoon coconut oil if you're using chocolate chips, this helps keep the chocolate smooth and glossy when melted.

Instructions

  • Using a small, sharp knife, slice each date from end to end, just into the center, but not through to the other side. Open the dates gently (as if opening a book). If your dates aren't pitted, remove the seeds/pits.
  • Spoon the peanut butter into the dates, about 1/2 teaspoon each. Fold the dates back into shape (they won't close completely).
  • Melt the chocolate in a bowl over simmering water, or in the microwave, checking and stirring every 20 seconds. If desired, add the coconut oil to chocolate chips to ensure a smooth, glossy consistency.
  • Dunk the peanut butter stuffed dates in the melted chocolate and turn to coat. Transfer to a parchment- or foil-lined baking sheet to cool. If you want to speed up the process, transfer the dates to the refrigerator.
