Puff Pastry Bruschetta

Golden and flaky puff pastry, topped with savory vegetables and parmesan cheese. You need just three ingredients and about 20 minutes for this mouthwatering treat.

Ingredients

  • 1 sheet frozen puff pastry thawed according to package directions
  • 1/2 cup bruschetta topping of choice I used Wildfare fire-roasted eggplant bruschetta
  • 2 tablespoons shredded parmesan cheese preferably freshly shredded
  • Chopped fresh parsley for serving optional

Instructions

  • Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
  • Unroll the puff pastry on the prepared pan. Bake for 10 to 15 minutes, until puffed up and golden brown. Cool for 10 minutes (keep the oven at 400 degrees).
  • Divide the pastry into 3 equal pieces (use the folds as your guide).
  • Top the pastries with the bruschetta topping, to within 1/4-inch of the edges. Top with the parmesan cheese.
  • Return the pan to the oven and bake for 3 to 5 minutes, until the cheese melts. Top with parsley, if using, slice and serve.
