Golden and flaky puff pastry, topped with savory vegetables and parmesan cheese. You need just three ingredients and about 20 minutes for this mouthwatering treat.
Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
Unroll the puff pastry on the prepared pan. Bake for 10 to 15 minutes, until puffed up and golden brown. Cool for 10 minutes (keep the oven at 400 degrees).
Divide the pastry into 3 equal pieces (use the folds as your guide).
Top the pastries with the bruschetta topping, to within 1/4-inch of the edges. Top with the parmesan cheese.
Return the pan to the oven and bake for 3 to 5 minutes, until the cheese melts. Top with parsley, if using, slice and serve.
