Ravioli in Pesto Tomato Sauce

Ingredients

  • 20 ounces ravioli of choice
  • 14- ounce can tomato sauce or 2 cups
  • 2 tablespoons basil pesto
  • 2 tablespoons grated parmesan cheese plus more for serving
  • Salt and freshly ground black pepper
  • 1 cup shredded mozzarella cheese
  • Chopped fresh basil or parsley for serving optional

Instructions

  • Preheat the oven to 350 degrees.
  • Cook the ravioli according to the package directions.
  • Meanwhile, in a large bowl, whisk together the tomato sauce, pesto, and parmesan cheese. Add the cooked ravioli and stir gently to coat.
  • Transfer the ravioli to a shallow baking dish or ovenproof pan and top with the mozzarella cheese. Cover with foil and bake for 15 minutes. Uncover and bake for 5 more minutes, until the cheese melts.
  • Top with basil or parsley, if using, and serve.
