Salsa Beef and Rice
Chili-scented beef, simmered in a savory, chunky blend of tomato sauce and salsa. You choose the salsa, you choose the flavor profile. Top with cheese, serve over rice and dinner is ready in about 20 minutes.

1 cup rice of choice I chose long grain white rice 1 pound lean ground beef 2 teaspoons chili powder 1 teaspoon ground cumin Salt and freshly ground black pepper 1 cup tomato sauce 1 cup salsa of choice 1 cup shredded cheddar cheese or Mexican cheese blend, or cheese of choice Chopped fresh cilantro for serving optional Chopped green onions for serving optional
Cook the rice according to the package directions.
Meanwhile, brown the beef in a large skillet over medium-high heat, breaking up the meat as it cooks.
Add the chili powder, cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and stir to coat. Cook for 1 minute, until the spices are fragrant.
Add the tomato sauce and salsa and bring to a simmer. Reduce the heat to medium-low and simmer for 10 minutes.
Spoon the beef mixture over the rice and top with cheese, cilantro, and green onions (if using).
