Instructions
Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or coat with cooking spray.
Unfold both pastry sheets and cut each sheet into 9 squares, creating 18 squares (use the seams to divide the pastry into 3 strips, then cut each strip into 3 squares).
Place one sausage link diagonally in the center of each pastry square, so the ends of the sausage face two points of the square. Top with the cheddar cheese, about 1 tablespoon cheese per roll up.
Fold over two opposite corners of each square, covering the filling. Use water moistened fingers to keep the dough sealed together. Transfer the roll ups to the prepared pan.
In a small bowl, whisk together the egg and maple syrup. Brush the egg mixture on the pastry.
Bake for 15 to 18 minutes, until puffed up and golden brown. If any roll ups popped open during baking, simply press them back together before cooling.
Serve hot with extra maple syrup on the side for dunking.
