10-ouncecan Rotel diced tomatoes with green chiliesmild or hot, drained
1cupshredded mild or sharp cheddar cheese
Salt and freshly ground black pepper
Cooked rice for serving
Fresh cilantro for serving

Instructions
Brown the sausage in a large skillet over medium-high heat, breaking up the meat as it cooks. Remove any excess grease by using tongs to rub a paper towel around the bottom of the pan.
Add the chili powder, onion powder, and garlic powder and stir to coat. Add the cream cheese and cook until melted. Add the tomatoes and bring to a simmer. Reduce the heat to low and stir in the cheddar cheese. Cook and stir until the cheese melts. Season to taste with salt and black pepper.
Spoon the sausage mixture over the rice and garnish with cilantro. Serve with hot sauce if desired.
