Spicy Peanut Noodles

These incredible noodles are glistening with a sweet and savory, slightly fiery peanut sauce!

Ingredients

  • 12 to 16 ounces noodles of choice I used Chinese wheat noodles; you can use somen, soba, buckwheat, ramen noodles, rice noodles, and even spaghetti or linguine!
  • 1/2 cup tamari sauce or soy sauce
  • 4 tablespoons peanut butter
  • 3 tablespoons mirin
  • 1 tablespoon brown sugar
  • 1-2 tablespoons sriracha hot sauce or more/less to taste
  • 1 teaspoon minced or grated fresh ginger
  • 1 clove garlic minced
  • 1 teaspoon sesame oil
  • 1 tablespoon avocado oil or vegetable oil
  • 1 bell pepper any color, seeded and sliced into strips
  • 1/2 cup sliced onion
  • Salt and freshly ground black pepper
  • Chopped green onions for serving

Instructions

  • Cook the noodles according to the package directions. Drain, reserving 1/2 cup of the cooking water. Rinse the noodles under cold water to prevent further cooking and set aside.
  • Meanwhile, in a small bowl, whisk together the tamari sauce, peanut butter, mirin, brown sugar, hot sauce, ginger, garlic, and sesame oil. Set aside.
  • Heat the oil in a large skillet over medium-high heat. Add the bell pepper and onion and cook for 3 to 5 minutes, until soft.
  • Add the tamari sauce mixture and bring to a simmer. Add the noodles with some of the pasta cooking water and toss to combine. Add more of the pasta cooking water if desired. Season to taste with salt and black pepper.
  • Top with green onions and chutni punch spicy peanut spice blend (if using) and serve.
