Spicy Pork Noodle Bowls

Ingredients

  • 8 ounces rice noodles also called pad Thai noodles
  • 1 tablespoon vegetable oil
  • 1 pound pork tenderloin cut into bite-size pieces
  • 1/4 cup soy sauce or tamari sauce for a gluten-free option
  • 2 tablespoons chili garlic sauce or more/less to taste
  • 2 tablespoons light brown sugar
  • 1 tablespoon rice vinegar regular or seasoned
  • 1 tablespoon fresh lime juice
  • Chopped green onions for serving
  • Lime wedges or slices for serving

Instructions

  • Cook the rice noodles according to the package directions (or soak them in very hot water for 5 to 10 minutes, until al dente). Drain and set aside.
  • Meanwhile, heat the oil a large skillet over medium-high heat. Add the pork and cook until lightly browned on all sides. Add the soy sauce, chili garlic sauce, brown sugar, rice vinegar, and lime juice and bring to a simmer. Fold in the noodles and cook for 1 to 2 minutes to heat through.
  • Top with green onions and serve with lime wedges/slices on the side.
