Ingredients

  • 1 teaspoon olive oil
  • 9-10 ounces fresh baby spinach leaves or 10 ounces frozen spinach, thawed and drained
  • 1 teaspoon minced garlic
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons sour cream
  • 2 tablespoons grated or shredded parmesan cheese
  • Salt and freshly ground black pepper

Instructions

  • Heat the oil in a large skillet over medium-high heat. Add the spinach and cook until wilted, stirring frequently. Reduce the heat to low, add the garlic and cook for 30 seconds.
  • Stir in the mozzarella, sour cream, and parmesan cheese. Stir until the cheese melts. Season to taste with salt and black pepper and serve hot.
