Equipment

Ingredients

  • 3/4 cup apricot preserves
  • 1/4 cup soy sauce
  • 1 tablespoon mirin Japanese rice wine
  • 1 teaspoon dried cilantro
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil or peanut oil
  • 1 pound boneless skinless chicken breasts tenders, or thighs
  • Salt and freshly ground black pepper
  • Fresh cilantro for serving

For Serving

  • Butter lettuce leaves or rice, or Asian noodles

Instructions

  • In a medium bowl, whisk together the apricot preserves, soy sauce, mirin, dried cilantro, onion powder, and garlic powder. Set aside.
  • Heat the oil in a large skillet or saucepan over medium-high heat. Add the chicken and cook until golden brown on both sides. Season the chicken with salt and black pepper.
  • Add the apricot preserve mixture and bring to a simmer. Reduce the heat to low, cover and simmer for 10 to 15 minutes, until you can easily shred the chicken with two forks.
  • Shred the chicken into the sauce. Simmer for 5 minutes to heat through.
  • Season to taste with salt and black pepper.
  • Top with cilantro and serve - either over rice or Asian noodles, or in lettuce leaves.
