Turkey Meatballs in Cranberry Sauce

Ingredients

  • 20 ounces ground turkey or ground turkey breast, or ground chicken
  • 1/2 cup crumbled feta cheese or goat cheese, plus more for garnish
  • 1/3 cup chopped green onions plus more for garnish
  • 1/3 cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon herbes de Provence or Italian herb seasoning
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 cups homemade cranberry sauce or 15-ounce can whole berry cranberry sauce
  • 1/2 cup chicken broth

Instructions

  • Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
  • In a medium bowl, combine the turkey, feta, green onions, panko, egg, garlic, herb seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well. Shape the mixture into 12 meatballs and transfer the meatballs to the prepared pan. Brush the meatballs with the olive oil.
  • Transfer the pan to the oven and bake for 20 minutes, until the meatballs are cooked through (165 degrees on a meat thermometer).
  • Meanwhile, combine the cranberry sauce and chicken broth in a large saucepan or high-sided skillet and set the pan over medium-low heat. Bring to a simmer. Simmer for 10 minutes, or until the meatballs finish cooking.
  • Add the meatballs to the cranberry sauce and simmer for 5 to 7 minutes to heat through.
  • Garnish with feta and green onions and serve.
