This dish is ready in under 15 minutes. That includes prep time! Once the salmon hits the baking sheet, you simply season it with salt, pepper, and Italian seasoning. Then the gorgeous fillets are topped with roasted red peppers and roasted until the fish is buttery-soft and fork-tender. Add parsley or chives (or not) and dinner is ready.

Italian seasoning is a one-stop-shop for flavor (a medley of basil, parsley, thyme, rosemary, oregano, and bay leaves – depending on the brand), and those flavors partner beautifully with juicy, smoky roasted red peppers.

How should you serve your roasted red pepper salmon? I served our salmon with brown rice (that I simply seasoned with S&P) and roasted asparagus (that I splashed with lemon). I suggest you serve the salmon with your favorite grain, or bread, and/or a side salad and you’ll be good to go.

Roasted Red Pepper Salmon

Ingredients
 

  • Olive oil for coating the pan and drizzling over the salmon
  • 1 1/2 pounds salmon fillets, whole or individual fillets
  • Salt and freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup chopped roasted red peppers
  • Chopped fresh parsley or chives for serving, optional

  • Preheat the oven to 400 degrees. Brush a shallow baking dish or nonstick baking pan with olive oil.
  • Pat the salmon fillets dry and transfer them to the prepared pan. Season the salmon with salt, black pepper, and Italian seasoning. Spoon the roasted red peppers all over the salmon fillets.
  • Roast for 8 to 10 minutes, until the salmon is fork tender (a meat thermometer should register 145 degrees).
  • Top the salmon with fresh parsley or chives, if using, and serve.
