Lemon Chicken


This ultra-juicy chicken is shimmering with a buttery, garlicky, lemony glaze. Plus, the chicken is scented with herbs and parmesan, so there’s an incredible amount of flavor in every juicy bite!

Look how short the ingredient list is! All pantry staples too. When you combine butter, garlic, lemon juice, and dried herbs (Italian seasoning in this case), you don’t need anything else. The butter mellows and sweetens the lemon and garlic, and the Italian seasoning is a one-stop-shop for flavor (basil, parsley, rosemary, thyme, and oregano).
This is the ideal meal for a busy weeknight. This meal is a one-skillet meal that’s ready in under 20 minutes. There are no vegetables to dice or slice, and very few ingredients in the sauce. And if you purchase breast fillets (thinly sliced boneless chicken breasts), you’ll save even more time.

What should you use if you don’t have Italian seasoning? Easy answer – any dried herbs you have on hand. I suggest basil, parsley, oregano, marjoram, and rosemary. Any one of those (or a combination of what you have) will work beautifully here.

How should you serve your lemon chicken? I kept the meal gluten-free by serving the chicken with fluffy white rice. You can choose rice (white, basmati, jasmine, brown, wild), your favorite grain, or roasted potatoes. For a low-carb meal, serve the chicken with a tossed green salad and vegetables on the side.

This meal is super healthy too. Although there’s butter in the sauce, you need just 4 tablespoons and the meal serves 4 people. A little butter goes a long way when it comes to making rich, creamy sauces.

Lemon Chicken
Ingredients
- 1 pound boneless skinless chicken breasts, halved through the middle to make thin fillets, or 1 pound pre-sliced chicken breast fillets
- Salt and freshly ground black pepper
- 2 tablespoons grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 4 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1/4 cup chicken broth
- Chopped fresh parsley for serving, optional
- Lemon slices for garnish, optional
Instructions
- Season both sides of the chicken with salt and black pepper. Season both sides with the parmesan cheese and Italian seasoning.
- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides. Transfer the chicken to a plate.
- Melt the butter in the same pan over medium heat, scraping up any browned bits from the bottom of the pan. Add the garlic and cook for 1 minute. Add the lemon juice and chicken broth and bring to a simmer.
- Return the chicken to the pan with any accumulated juices from the plate. Simmer for 5 minutes, until the chicken is cooked through.
- Top with parsley, if using, and serve with lemon slices (if desired).
