Chocolate Filled Sugar Cookies

Buttery sugar cookies, baked to perfection and then stuffed with cinnamon-scented dark chocolate! This is an excellent way to jazz up store-bought cookie dough!

You need just 4 ingredients to completely transform a package of cookie dough! First, choose your favorite cookie dough – I chose Halloween-themed sugar cookies because it’s the season right now! But, any sugar cookie dough works with this chocolate filling. In fact, what cookie doesn’t work with chocolate filling?!

Once you have your cookie figured out, you just need 3 more ingredients! Grab some chocolate, cinnamon, and a little vegetable oil! I used semisweet chocolate morsels, but you can use dark chocolate, milk chocolate, and even white chocolate. You can also use melting wafers or chop up your favorite chocolate bar.

Why add vegetable oil to the chocolate? Adding a touch of vegetable oil to the chocolate guarantees that it melts perfectly and retains its sheen. It’s sort of optional, but I highly recommend it.

Cinnamon changes the game! The hint of cinnamon in the filling catapults the flavor of chocolate while adding a nuance of autumn! You can also use pumpkin pie spice!

Chocolate Filled Sugar Cookies

Buttery sugar cookies, baked to perfection and then stuffed with cinnamon-scented dark chocolate! This is an excellent way to jazz up store-bought cookie dough!

Ingredients
 

  • 1 package sugar cookie dough of choice, I used a 9-ounce package of Pillsbury pumpkin-shape sugar cookie dough with 20 pre-cut cookies
  • 1 1/2 cups semisweet chocolate chips, or melting wafers, or a cut-up chocolate bar
  • 1 teaspoon vegetable oil or coconut oil
  • 1/2 teaspoon ground cinnamon

Instructions
 

  • Bake and cool the cookies according to the package directions.
  • Combine the chocolate chips and oil in a bowl and melt in the microwave (checking and stirring every 30 seconds), or over a saucepan of simmering water. Fold in the cinnamon.
  • When the cookies have cooled, spoon the chocolate mixture on the bottom of half of the cookies. Top with the second cookie to make a sandwich. Cool until set.
  • Store leftovers in an airtight container for up to one week.
