Spicy Peanut Noodles

These incredible noodles are glistening with a sweet and savory, slightly fiery peanut sauce! Super easy to prepare, ready in minutes, and easy to customize!
These noodles deliver the perfect amount of sweet heat! The sweetness comes from peanut butter and brown sugar, and the heat comes from sriracha hot sauce! There’s also tamari sauce and mirin – which add their own level of saltiness and sweetness. The sauce is smooth, salty, sweet, fiery, and insanely delicious!

What kind of noodles should you use? I used Chinese wheat noodles – the flat noodles that resemble linguine. You can use those, or any wheat-based Asian noodle, or Italian pasta. For gluten-free noodles, use rice noodles, like pad Thai noodles or rice stick vermicelli.

I added bell peppers and onion, but the options are endless. Feel free to load up these noodles with more vegetables. You can add brococli, snow peas, snap peas, green peas, asparagus, leeks, and more. And use any color bell pepper you prefer. I like the sweetness of red peppers, but green peppers work just as well.
And for added protein, add chicken or shrimp!


Spicy Peanut Noodles
Ingredients
- 12 to 16 ounces noodles of choice, I used Chinese wheat noodles; you can use somen, soba, buckwheat, ramen noodles, rice noodles, and even spaghetti or linguine!
- 1/2 cup tamari sauce, or soy sauce
- 4 tablespoons peanut butter
- 3 tablespoons mirin
- 1 tablespoon brown sugar
- 1-2 tablespoons sriracha hot sauce, or more/less to taste
- 1 teaspoon minced or grated fresh ginger
- 1 clove garlic, minced
- 1 teaspoon sesame oil
- 1 tablespoon avocado oil, or vegetable oil
- 1 bell pepper, any color, seeded and sliced into strips
- 1/2 cup sliced onion
- Salt and freshly ground black pepper
- Chopped green onions for serving
Instructions
- Cook the noodles according to the package directions. Drain, reserving 1/2 cup of the cooking water. Rinse the noodles under cold water to prevent further cooking and set aside.
- Meanwhile, in a small bowl, whisk together the tamari sauce, peanut butter, mirin, brown sugar, hot sauce, ginger, garlic, and sesame oil. Set aside.
- Heat the oil in a large skillet over medium-high heat. Add the bell pepper and onion and cook for 3 to 5 minutes, until soft.
- Add the tamari sauce mixture and bring to a simmer. Add the noodles with some of the pasta cooking water and toss to combine. Add more of the pasta cooking water if desired. Season to taste with salt and black pepper.
- Top with green onions and and serve.
