Chicken Cheesesteaks with Fried Onions and Peppers

Sometimes simple ingredient lists make for the best meals. And it’s not because meal prep is easy, that’s just a bonus. I’s because when you have fewer “competing flavors”, each one has a chance to shine. In this dish, the onions and bell pepper are perfectly sweet and caramelized and the chicken is enlivened with salty, tangy Worcestershire sauce. The cheese is sharp, and the bread is toasty. It’s perfection in every bite.

This recipe starts with pre-cooked chicken, so grab those leftovers! You can make this dish with leftover cooked chicken from a previous meal, or you can use sous vide chicken, grilled chicken from the deli meat section of your grocery store, or rotisserie chicken meat. If you’d rather cook the chicken from scratch, season about 1 pound of chicken breasts (or chicken tenders) with salt and black pepper, place them on a baking sheet, and roast them at 400 degrees for 15 to 25 minutes, until golden brown and cooked through.
Choose your favorite rolls or slice up a baguette for these amazing cheesesteaks. If you like soft rolls, serve the chicken, peppers, and cheese on hoagie/sub rolls. If you like a little crunch with your sandwiches, choose a crusty baguette (Italian, French, sourdough, etc.).

What should you serve with your chicken cheesesteaks?
I served baked chips and a mixed green salad with our cheesesteaks and it was a satisfying, complete meal. Since this is a healthy meal from the core (all ingredients are virtually fat-free and nutrient-rich), I kept it healthy with my side dishes.


Chicken Cheesesteaks with Fried Onions and Peppers
Ingredients
- 2 tablespoons olive oil, or vegetable oil, divided
- 1 cup sliced onion, any color
- 1 bell pepper, any color, seeded and sliced
- Salt and freshly ground black pepper
- 4 cups thinly sliced cooked chicken
- 1 tablespoon Worcestershire sauce
- 4 soft hoagie/sub rolls, or 1 baguette cut into 4 equal pieces, warmed if desired
- 1 cup cheddar cheese, provolone cheese, or cheese of choice

- Heat 1 tablespoon of the olive oil (or vegetable oil) in a large skillet over medium-high heat. Add the onion and bell peppers and cook for 3 to 5 minutes, until soft. Season the vegetables with salt and black pepper and transfer to a plate. Cover with aluminum foil to keep warm.
- Heat the remaining oil in the same skillet over medium-high heat. Add the chicken and Worcestershire sauce and cook for 2 to 3 minutes to heat through. Arrange the chicken in the hoagie rolls and top with the onions, peppers, and cheese. Serve or place under the broiler to melt the cheese.
