Herb-scented broccoli and a glorious amount of cheese, nestled into chewy, golden brown dough. You need four ingredients for this incredible meal, plus warm marinara on the side for dunking. The ultimate in comfort, with endless variations.
A calzone is basically a folded pizza; but instead of piling the cheese and other ingredients on top, everything is burrowed into a pocket of chewy-golden dough. I seasoned this calzone with a simple blend of pizza seasoning and garlic (both from the spice rack), then I added a copious amount of cheese and an abundance of broccoli. When dunked in warm sauce, each bite delivers everything you love about pizza, only better.
What type of fillings should you add? Whatever you want! I adore broccoli, but I've also made similar calzones with sautéed spinach, mushrooms, onions, and bell peppers. Whatever ingredients you put on your pizza, you can tuck into your calzone.
What type of dough should you use? I chose a frozen loaf of bread dough, the kind you can bake in a loaf pan. That works perfectly, as does a pound of refrigerated bread or pizza dough. You can find the refrigerated dough near the deli section in most grocery stores. And don't forget, your local pizza shop likely sells fresh dough too!
Is the recipe easy to double? Definitely! In fact, you can see two calzones on the baking sheet! I stuffed one with broccoli and the other was plain cheese. You can easily make one vegetarian and one for the meat-lovers in the clan - stuffed with pepperoni, sausage, or ground beef.
Broccoli and Cheese Calzone
1 pound bread or pizza dough, refrigerated or frozen and thawed according to package directions (see note above)
1 teaspoon pizza seasoning or Italian seasoning
1/2 teaspoon garlic powder or granulated garlic
1 cup shredded mozzarella cheese
Olive oil for brushing the top
For broccoli calzones: 2 cups broccoli florets, blanched in boiling water for 2 minutes and drained
Warm pizza sauce or pasta sauce for serving
Instructions:
Preheat the oven to 375. Line a large baking sheet with parchment paper or foil.
Roll the dough out into a 12x8-inch rectangle (if the dough is sticking to your work surface, lightly flour the surface).
Sprinkle the seasoning and garlic powder all over the dough, to within 1/2-inch of the edges.
Top one long side with the cheese. If you're adding broccoli, top the cheese with the broccoli.
Pull the un-topped side up and over the filling and pinch around the edges to seal. Gently lift the calzone and transfer it to the prepared pan (if any edges opened up during the transfer, simply pinch them back together).
Brush olive oil all over the top and sides of the calzone. Cut 3 to 4 air vents in the top of the calzone to allow steam to escape during cooking.
Bake for 15 to 20 minutes, until golden brown. Cool for a few minutes before slicing and serving with warm sauce on the side.
