Super creamy ice cream with the distinct flavor of Oreo cookies in every bite. Super easy, 4 ingredients, and the dreamiest, creamiest dessert ever. Grab popsicle molds and/or small ramekins, or simply freeze the concoction in a big bowl - just know that you'll want this in your freezer at all times. Plus, this recipe is no cook, no-churn, and no special equipment is needed.
There's a story behind this recipe: My son Luke saw a TikTok video where a guy (@goldengully) made Oreo Kulfi. In just 60 seconds, he processed a few ingredients in a blender, poured the concoction into pop molds, and created a rich and creamy cookie ice cream for his "cheat day". Luke showed me the video and said, "Mom, you should make this". So I did. Inspired by TikTok, mastered by mom.
What is kulfi? Kulfi is a popular Indian dessert that's similar to ice cream in appearance and taste, but not texture. Because kulfi isn't whipped or aerated like American ice cream, it's much thicker and richer. Think custard-based ice cream without the eggs. In fact, kulfi requires no eggs or preservatives to reach that creamy state; it's a simple blend of milk, sugar, and natural ingredients (the most popular being pistachios, vanilla, mangos, rose water, cardamom, and saffron).
The traditional process for making kulfi can be painstaking (but worth it). It starts with boiling milk over low heat until it's considerably reduced (yet not sticking to the pan, so you need to stay close). Then, the thickened milk is sweetened, flavored, and frozen. Sometimes the creamy blend is frozen in popsicle molds, but ramekins, small cups (even paper cups), and other pop molds (like mini pops) work equally well.
Why didn't I use sweetened condensed milk? Many "quick" kulfi recipes replace the reduced/sweetened milk with sweetened condensed milk; so I tried it too. It didn't work. Don't get me wrong, my batch of puréed Oreos in cream was insanely delicious. But it was more pudding-like; not firm like ice cream (after 8 hours in my freezer). Then it occurred to me: the Oreo cream filling is pretty much the same thing - sweetened cream. Having both sweetened condensed milk and the cookie filling was too much. So I ditched the sweetened condensed milk and used a combination of heavy cream and milk instead. Perfection.
The TikTok version also used evaporated milk, which is added to speed up the process (when you want to ditch reducing milk over the stove, evaporated milk eliminates the cooking process). That said, I found I didn't need the evaporated milk. The addition of regular whole milk and crushed cookies did the job just fine. I'm pretty confident you'll agree.
Oreo Kulfi
1 cup heavy cream
1 cup whole milk
2 tablespoons granulated sugar
Pinch of salt
15 Oreo cookies, regular or double-stuffed
Instructions:
In a blender, combine the heavy cream, milk, sugar, and salt. Process until blended. Break the cookies into smaller pieces and add them to the blender.
Process until blended and smooth.
Transfer the mixture to a bowl, ramekins, or molds and freeze until firm, about 8 hours.
Makes about 3 cups Oreo Kulfi or about 8-10 pops
