Meatballs with Marsala Cream Sauce

Juicy, parmesan and herb-spiked meatballs in a satiny sauce that features sweet onion, Marsala wine, tangy Worcestershire sauce, and a hint of cream. I basically named the entire ingredient list so — this restaurant-worthy dish is a snap to prepare and ready in about 30 minutes.

This Marsala sauce tastes like steakhouse gravy. And I’m completely smitten! I almost called the sauce a “gravy”, because it’s so velvety. But there are little nuggets of sautรฉed onions, so I decided to stick with the name — let’s face it, there are gravy aficionados and I’m certain they would call me out for a chunky gravy.

Meatballs with Marsala Cream Sauce

Juicy, parmesan and herb-spiked meatballs in a satiny sauce that features sweet onion, Marsala wine, tangy Worcestershire sauce, and a hint of cream.

Ingredients

For the Meatballs

  • 1 pound lean ground beef
  • 1/2 cup panko bread crumbs, regular or gluten-free
  • 2 tablespoons grated parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper

For the Marsala Cream Sauce

  • 1 tablespoon butter
  • 1/2 cup chopped onion, any color
  • 1 1/2 tablespoons all-purpose flour
  • 1/2 cup Marsala wine, or sherry wine, or red wine
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup heavy cream
  • Chopped fresh parsley for serving, optional

Equipment

Instructions

  • Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
  • To make the meatballs, in a large bowl, combine the beef, panko bread crumbs, parmesan cheese, egg, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and shape the mixture into 16 to 20 meatballs. Transfer the meatballs to the prepared pan and bake for 20 to 25 minutes, until browned and cooked through.
  • Meanwhile, to make the cream sauce, melt the butter in a large skillet or saucepan over medium-high heat. Add the onion and cook for 3 to 5 minutes, until soft. Add the flour and stir to coat. Add the Marsala wine and bring to a simmer. When the liquid has reduced by half, add the broth and Worcestershire sauce and bring to a simmer. Reduce the heat to low and simmer for 5 minutes.
  • Stir in the cream until blended. Add the meatballs and cook for 1 to 2 minutes to heat through.
  • Top with fresh parsley, if using, and serve.
