Crispy Air Fryer Potatoes

These amazing potatoes boast a crisp, herby skin, and soft, buttery flesh. Plus, thanks to the air fryer, they're super healthy too.

Ingredients

  • 1 1/2 pounds small gold or red potatoes halved (or quartered if potatoes are larger than 2 inches in diameter)
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper

Instructions

  • In a large bowl, combine the potatoes and olive oil and toss to coat. Add the Italian seasoning, garlic powder, onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and toss to coat.
  • Transfer the potatoes to the basket of your air fryer and spread them out.
  • Air fry at 400 degrees 15 to 20 minutes, until golden brown and crisp (and tender when pierced with a fork), shaking the basket halfway through cooking.
  • To roast the potatoes in the oven: Add 1/2 tablespoon of olive oil (for a total of 2 tablespoons) and spread the potatoes out on a parchment or foil-lined baking sheet. Roast at 400 degrees for 20 to 25 minutes, until crisp on the outside and fork-tender
