Instructions
In a large bowl, combine the potatoes and olive oil and toss to coat. Add the Italian seasoning, garlic powder, onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and toss to coat.
Transfer the potatoes to the basket of your air fryer and spread them out.
Air fry at 400 degrees 15 to 20 minutes, until golden brown and crisp (and tender when pierced with a fork), shaking the basket halfway through cooking.
To roast the potatoes in the oven: Add 1/2 tablespoon of olive oil (for a total of 2 tablespoons) and spread the potatoes out on a parchment or foil-lined baking sheet. Roast at 400 degrees for 20 to 25 minutes, until crisp on the outside and fork-tender
