Crispy Air Fryer Roasted Potatoes

These amazing potatoes boast a crisp, herby skin, and soft, buttery flesh. I mean, look at that deep color! Plus, thanks to the air fryer, they’re super healthy too. Made with a handful of ingredients and ready in about 20 minutes, you need these spuds in your life!

There’s so much flavor and color in these little potatoes! The seasoning is a simple combination of Italian seasoning, garlic powder, and onion powder, but flavors soar because the potatoes are air fried until dark golden brown and crisp.

Leave the potato skins on! I love crispy, salty potato skins, so I highly encourage you to leave the skins on. Plus, who wants to peel all those little potatoes? If your potatoes are not already cleaned, rinse them under cold water and pat them dry before tossing with the olive oil and seasonings.

Don’t overcrowd the basket! I used my 7-quart air fryer and 1 1/2 pounds of potatoes had plenty of room. Why is that important? Because you want the hot air to circulate around your food so it crisps up and cooks evenly. If you have a smaller air fryer, make sure you don’t overcrowd the basket.
Feel free to change up the seasonings. This recipe is a great canvas for all future potato adventures. For spicy potatoes, add 1/2 teaspoon (or more) of cayenne pepper. For smoky spuds, add 1/2 teaspoon smoked paprika. And feel free to change up the herbs. Instead of Italian seasoning, try dried basil, rosemary, parsley, oregano, thyme, and sage – or a combination of those herbs.

Can you make these potatoes in the oven? Yes, of course! Add 1/2 tablespoon of olive oil (for a total of 2 tablespoons) and spread the potatoes out on a parchment or foil-lined baking sheet. Roast at 400 degrees for 20 to 25 minutes, until crisp on the outside and fork-tender.
Save leftovers! Store leftover potatoes in an airtight container in the refrigerator for up to 4 days, or in the freezer for up to 3 months. Thaw overnight before reheating. To reheat, air fry the potatoes at 400 degrees for 3 to 5 minutes.


Crispy Air Fryer Potatoes
Ingredients
- 1 1/2 pounds small gold or red potatoes, halved (or quartered if potatoes are larger than 2 inches in diameter)
- 1 1/2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and freshly ground black pepper
Instructions
- In a large bowl, combine the potatoes and olive oil and toss to coat. Add the Italian seasoning, garlic powder, onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper and toss to coat.
- Transfer the potatoes to the basket of your air fryer and spread them out.
- Air fry at 400 degrees 15 to 20 minutes, until golden brown and crisp (and tender when pierced with a fork), shaking the basket halfway through cooking.
