Easy Garlic Noodles

Saucy, spicy, creamy, and slick, these noodles are over-the-top delicious! They're super easy to make, vegetarian (but you could easily add protein), and ready in about 20 minutes.

Ingredients

  • 8 ounces Asian noodles such as soba, somen, or udon, I used round udon
  • 1 tablespoon olive oil or vegetable oil
  • 1/4 cup chopped green onions reserve some of the chopped green tops for serving if desired
  • 1/2 cup half-and-half or cream
  • 1/4 cup soy sauce or liquid aminos
  • 1/4 cup chili garlic sauce plus more for serving if desired
  • 1 teaspoon sesame oil
  • Salt and freshly ground black pepper
  • Fresh cilantro leaves for serving

Instructions

  • Cook the noodles according to the package directions. Drain and cover with foil to keep warm.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the green onions and cook for 2 to 3 minutes, until soft. Add the half-and-half, soy sauce, and chili garlic sauce and bring to a simmer. Reduce the heat to low and simmer for 3 to 5 minutes. Fold in the noodles.
  • Season to taste with salt and black pepper.
  • Top with cilantro (and more green onions if you saved some). Serve with extra chili garlic sauce on the side.
