Easy Garlic Noodles

Saucy, spicy, creamy, and slick, these noodles are over-the-top delicious! They’re super easy to make, vegetarian (but you could easily add protein), and ready in about 20 minutes.

Wait until you see this unique ingredient list! It’s an interesting combination of soy, chili garlic sauce, and half-and-half! The creaminess of the half-and-half creates a luxurious, velvety sauce for the noodles and balances out the acidity of the chili garlic paste. You don’t often see dairy in dishes like this, but it totally works. For a vegan version, use coconut milk for the same effect!

If you haven’t used chili garlic sauce before, you need to try it! Chili garlic sauce is sweet, spicy, and savory, and boasts little nuggets of chilies and garlic in every spoonful. It’s like next level sriracha. I used it to amplify flavor in this noodle dish, but it’s also great with eggs, rice, meat, poultry, seafood, vegetables, and more! Pretty much everything!

You can add protein to this dish if you want. This dish is vegetarian, but you can easily add cooked chicken, steak, pork, seafood, or shellfish when you fold in the noodles. Chicken, pork, and shrimp would be especially fabulous. For a vegan meal, use coconut milk instead of half-and-half and add tofu for added protein.

Easy Garlic Noodles

Saucy, spicy, creamy, and slick, these noodles are over-the-top delicious! They’re super easy to make, vegetarian (but you could easily add protein), and ready in about 20 minutes.

Ingredients
 

  • 8 ounces Asian noodles, such as soba, somen, or udon, I used round udon
  • 1 tablespoon olive oil or vegetable oil
  • 1/4 cup chopped green onions, reserve some of the chopped green tops for serving if desired
  • 1/2 cup half-and-half or cream
  • 1/4 cup soy sauce or liquid aminos
  • 1/4 cup chili garlic sauce, plus more for serving if desired
  • 1 teaspoon sesame oil
  • Salt and freshly ground black pepper
  • Fresh cilantro leaves for serving

  • Cook the noodles according to the package directions. Drain and cover with foil to keep warm.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the green onions and cook for 2 to 3 minutes, until soft. Add the half-and-half, soy sauce, and chili garlic sauce and bring to a simmer. Reduce the heat to low and simmer for 3 to 5 minutes. Fold in the noodles.
  • Season to taste with salt and black pepper.
  • Top with cilantro (and more green onions if you saved some). Serve with extra chili garlic sauce on the side.
