Ham and Cheddar Chicken

All the flavor with chicken cordon bleu without all the work! Seasoned and seared chicken breasts, topped with smoky ham and sharp and stretchy cheese - baked to perfection.

Ingredients

  • 4 thinly sliced chicken breasts or regular chicken breasts, pounded to ½-inch thickness
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 teaspoons Dijon mustard
  • 4 slices deli ham I prefer black forest ham
  • 4 slices cheddar cheese or Swiss cheese

Instructions

  • Preheat the oven to 350 degrees F.
  • Season both sides of the chicken with salt and pepper.
  • Place the flour in a shallow dish, add the chicken and turn to coat both sides. Shake off excess flour.
  • Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until both sides are golden brown. If needed, work in batches to prevent overcrowding the pan.
  • Transfer the chicken to a baking sheet or shallow baking dish and brush the top with the mustard (1/2 teaspoon mustard per piece of chicken).
  • Top the chicken with the ham. Transfer the chicken to the oven and bake for 5 minutes.
  • Top the chicken with the cheese and return the pan to the oven. Bake for 5 to 10 more minutes, until the cheese melts and the chicken is cooked through (165 degrees F on a meat thermometer).
  • If desired, place the pan under the broiler to add color to the cheese.
