Season both sides of the chicken with salt and pepper.
Place the flour in a shallow dish, add the chicken and turn to coat both sides. Shake off excess flour.
Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until both sides are golden brown. If needed, work in batches to prevent overcrowding the pan.
Transfer the chicken to a baking sheet or shallow baking dish and brush the top with the mustard (1/2 teaspoon mustard per piece of chicken).
Top the chicken with the ham. Transfer the chicken to the oven and bake for 5 minutes.
Top the chicken with the cheese and return the pan to the oven. Bake for 5 to 10 more minutes, until the cheese melts and the chicken is cooked through (165 degrees F on a meat thermometer).
If desired, place the pan under the broiler to add color to the cheese.
