Ham and Cheddar Chicken

All the flavor with chicken cordon bleu without all the work! Seasoned and seared chicken breasts, topped with smoky ham and sharp and stretchy cheese – baked to perfection.

This is an excellent way to craft a tasty chicken dish while clearing out your deli drawer! I had some leftover Black Forest ham, cheddar cheese, and parmesan cheese and a new dish was born. The chicken is ultra flavorful and works with a variety of different meats and cheeses.

If you want to mix things up, try swapping in pepperoni or salami for the ham and mozzarella cheese for the cheddar. You can also try turkey and provolone, olive loaf and Swiss, or any combination you have handy.


Ham and Cheddar Chicken
Ingredients
- 4 thinly sliced chicken breasts, or regular chicken breasts, pounded to ½-inch thickness
- Salt and black pepper
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 2 teaspoons Dijon mustard
- 4 slices deli ham, I prefer black forest ham
- 4 slices cheddar cheese, or Swiss cheese
Instructions
- Preheat the oven to 350 degrees F.
- Season both sides of the chicken with salt and pepper.
- Place the flour in a shallow dish, add the chicken and turn to coat both sides. Shake off excess flour.
- Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until both sides are golden brown. If needed, work in batches to prevent overcrowding the pan.
- Transfer the chicken to a baking sheet or shallow baking dish and brush the top with the mustard (1/2 teaspoon mustard per piece of chicken).
- Top the chicken with the ham. Transfer the chicken to the oven and bake for 5 minutes.
- Top the chicken with the cheese and return the pan to the oven. Bake for 5 to 10 more minutes, until the cheese melts and the chicken is cooked through (165 degrees F on a meat thermometer).
- If desired, place the pan under the broiler to add color to the cheese.
