Maple Roasted Sweet Potatoes
These maple-glazed sweet potatoes are caramelized and buttery, with a little hint of sweet onion. They're also impossibly easy to make.

- 1 1/2 pounds sweet potatoes or yams peeled and cut into 2-inch chunks
- 2 tablespoons olive oil
- 2 tablespoons melted butter
- 1 teaspoon onion powder
- Salt and freshly ground black pepper
- 2 tablespoons maple syrup
Preheat the oven to 400 degrees.
In a large bowl, combine the sweet potatoes, olive oil, melted butter, onion powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Toss to coat.
Transfer the mixture to a shallow baking dish and roast for 20 minutes. Toss the sweet potatoes and then drizzle with the maple syrup.
Return the pan to the oven and roast for 5 to 10 more minutes, until the potatoes are tender.
