Veggie Wraps with Hummus, Peppers, Spinach

Ingredients

  • 4 wraps of choice such as tomato basil, spinach, whole wheat, keto, and/or gluten-free, I used spinach and herb
  • 1/2 cup prepared hummus of choice I used traditional
  • 3-4 ounces baby spinach leaves stems removed
  • 12- ounce jar roasted red peppers drained and thinly sliced
  • 1 English seedless cucumber, sliced crosswise into thin rounds
  • Salt and freshly ground black pepper

Instructions

  • Arrange the wraps on a flat surface.
  • Spread 2 tablespoons of the hummus down the center of each of the wrap, to within 1-inch of the ends.
  • Top the hummus with the spinach leaves, red pepper slices, and cucumber, arranging everything down the middle. Season with salt and black pepper. Fold over one side to cover the middle, roll in the sides and continue rolling up.
  • Slice in half and serve.
