Veggie Wraps with Hummus, Peppers, and Spinach

Chewy tortillas, garlicky hummus, smoky peppers, crunchy cucumbers, and vibrant spinach – all in one bite. So healthy, so delicious, and you need just 5 ingredients.

There’s so much flavor and texture in these wraps! The hummus is tangy, the peppers are smoky and sweet, the cucumber is crisp and juicy, and the spinach is grassy and fresh. Everything works so well together and every bite is sensational!

The great thing about these wraps is that you can customize them any way you want. I used traditional hummus, but you can use roasted red pepper hummus, garlic hummus, or any hummus you want. The same goes for the wraps – I chose spinach, but you can use regular white flour, whole grain, and/or sun-dried tomato. Gluten-free wraps work too!

You can make these wraps in advance. Which makes them great for serving a crowd. I made a big batch and brought them to my son’s cross country meet! Since there wasn’t any meat or dairy, I didn’t worry about keeping them perfectly chilled while the kiddos raced!

Veggie Wraps with Hummus, Peppers, Spinach
Ingredients
- 4 wraps of choice, such as tomato basil, spinach, whole wheat, keto, and/or gluten-free, I used spinach and herb
- 1/2 cup prepared hummus of choice, I used traditional
- 3-4 ounces baby spinach leaves, stems removed
- 12- ounce jar roasted red peppers, drained and thinly sliced
- 1 English, seedless cucumber, sliced crosswise into thin rounds
- Salt and freshly ground black pepper
Instructions
- Arrange the wraps on a flat surface.
- Spread 2 tablespoons of the hummus down the center of each of the wrap, to within 1-inch of the ends.
- Top the hummus with the spinach leaves, red pepper slices, and cucumber, arranging everything down the middle. Season with salt and black pepper. Fold over one side to cover the middle, roll in the sides and continue rolling up.
- Slice in half and serve.
