Puff Pastry Bruschetta

Golden and flaky puff pastry, topped with savory vegetables and parmesan cheese. You need just three ingredients and about 20 minutes for this mouthwatering treat.

This is the ultimate party appetizer! Just grab one sheet of puff pastry, any variety of bruschetta topping, and parmesan cheese! A quick bake in the oven and this puffed-up twist on bruschetta is ready to serve.

Choose any bruschetta topping you want! There are many varieties of bruschetta toppings, from tomato, to roasted red pepper, mushroom, olive, and eggplant. I used Wildfare’s fire-roasted eggplant bruschetta topping which boasts eggplant, tomatoes, garlic, basil, and mint. It’s chunky and aromatic and makes an excellent topping for buttery puff pastry.
This recipe is easy to double and triple! When cut, one sheet of puff pastry makes about 8 to 10 bruschetta squares. If you need more, just add another sheet (or two) of puff pastry!

Make a variety of bruschetta for your next gathering! If you’re serving a crowd, use a different bruschetta topping for each sheet of puff pastry. One could be tomato, one olive, and another mushroom! Have some fun; the possibilities are endless!

I suggest you use freshly grated parmesan. Since this recipe has just 3 ingredients, each one matters. I suggest freshly shredded or grated parmesan cheese for it’s bold, fresh flavor. Try to avoid the shaker-style parmesan cheese for this recipe.


Puff Pastry Bruschetta
Ingredients
- 1 sheet frozen puff pastry, thawed according to package directions
- 1/2 cup bruschetta topping of choice, I used Wildfare fire-roasted eggplant bruschetta
- 2 tablespoons shredded parmesan cheese, preferably freshly shredded
- Chopped fresh parsley for serving, optional
Instructions
- Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper or foil.
- Unroll the puff pastry on the prepared pan. Bake for 10 to 15 minutes, until puffed up and golden brown. Cool for 10 minutes (keep the oven at 400 degrees).
- Divide the pastry into 3 equal pieces (use the folds as your guide).
- Top the pastries with the bruschetta topping, to within 1/4-inch of the edges. Top with the parmesan cheese.
- Return the pan to the oven and bake for 3 to 5 minutes, until the cheese melts. Top with parsley, if using, slice and serve.
