Everything Bagel Smashed Potatoes

Buttery middle, crispy skin, and crunchy bits of sea salt, garlic, onion, and sesame seeds – these 3-ingredient smashed potatoes are a must for your recipe repertoire. They’re perfect for any busy weeknight.

Smashed potatoes are so easy to make, and the result is divine. Smashed potatoes are especially awesome because they deliver two textural experiences – soft flesh and crispy skin. And with the everything bagel seasoning on top, you get even more textural fun!

Here’s the easy process for making these spuds: Blanch the whole potatoes in boiling water until fork tender (since we’re boiling them, there’s no need to scrub them first!). Transfer the potatoes to a baking sheet and mash with a jar or mug. Brush the smashed potatoes with olive oil and sprinkle with everything bagel seasoning. Roast until crispy. Serve!
I served these smashed potatoes with kewpie mayo and it was the the perfect marriage! Kewpie mayo is completely optional (I just love its custard-like richness here), and/or you can use your favorite mayo. You can also served these spuds with ketchup. Since we’re using bagel seasoning, you could also use softened cream cheese!


Everything Bagel Smashed Potatoes
Ingredients
- 1 1/5 pounds small gold, red or white potatoes, or a combination
- 2 tablespoons olive oil
- 1 tablespoon everything bagel seasoning
- 1 tablespoon chopped fresh parsley for serving
- Kewpie mayonnaise or regular mayonnaise for serving, optional
Instructions
- Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper or foil.
- Place the potatoes in a large pot and pour over enough cold water to cover by about 2 inches. Set the pan over high heat and bring to a boil. Boil for 8 to 10 minutes, until fork-tender (timing will depend on the size of your potatoes).
- Drain and when cool enough to handle, transfer the potatoes to the prepared pan, spreading them out so they have room to be “smashed”.
- Use the bottom of a jar or mug to smash the potatoes until they are about 1/2-inch thick.
- Brush the potatoes with the olive oil and sprinkle with the everything bagel seasoning.
- Bake for 10 to 12 minutes, until the edges of the potatoes are crispy and golden brown. Top with parsley and serve with mayonnaise on the side (if desired).
